If you are living a normal life in our fast moving western world, working full or part time, and try to follow the paleo lifestyle at the same time, every day can bring a new challenge – particularly the challenge of “gathering food“ (apperently, not so much has changed since the Stone Age).
Paleo means making choices for your Health every day
After all, we simply can’t just buy a sandwich at the nearby bakery, have a muffin for coffee or order a portion of spaghetti carbonara in the evening if we are too tired to cook when we come home after a tough day at work. Our life is totally different. Since I am eating paleo, I am spending a lot – and I mean really a lot – of time thinking about what to cook next, planning the recipes and writing shopping lists.
Luckily, I love cooking or snuggling up on the couch enjoying a hot coconut chocolate while browsing through a cook book. However, as I chronically lack time, or as I am often too tired after work or simply want to have some sort of a social life and want to go out with friends instead of spending all night in the kitchen, being always prepared and reserving some extra time to plan ahead can be pretty difficult.
This is why I am proud to present you with today’s recipe. The phantastically easy beetroot carrot salad has become an integral part of my let’s name it “everyday cuisine”. It is not only super easy to prepare, it also perfectly fits almost every bowl, salad, quiche, fish or meat recipe. Usually, I season the salad with olive oil and apple cider vinegar and add a table spoon of linseed oil. This makes it a rich source not only of vitamin A, B1, 2 and 12, but also of omega-3 fatty acids and flavonoids. The apple cider vinegar supports the regulation of the acid-base balance by providing us with basic minerals such as magnesium and potassium.
But now to the reason why you can so easily integrate this salad into your everyday working life. It can be kept in the fridge for two or three days. So you can prepare several portions at a time and have always some salad ready if, for example, in the evening you want to put together a healthy bowl for dinner without much effort, or prepare your lunch for the next day.Print
2 big carrots
1 fresh raw beetroot (it should be firm and not flabby)
3-4 tbsp. unfiltered, cloudy apple cider vinegar
3-4 tbsp. olive oil
1 tbsp. linseed oil
2 tbsp. white or black sesame seeds
1. Peel the carrots and the beetroot, grate both with a coarse grater and mix it in a bowl.
2. Add oils, vinegar, salt, pepper and sesame and mix it.
